Healthy, low-ingredient protein cookies with clean macros. Easy to make, thick and soft texture, without a massive amount of peanut butter.

Ingredients

Dry Ingredients

  • Plain Flour: 100g (3.5oz)
  • PB2 Powder: 40g (1.4oz)
  • Vanilla Protein Powder (Whey/Casein blend): 80g (2.8oz)
  • Granulated Sweetener: 80g (2.8oz)
  • Corn Starch: 10g (0.35oz)
  • Baking Powder: 1/2 tsp
  • Baking Soda (bi-carb): 1/4 tsp
  • Instant Coffee: 1/2 tsp
  • Salt: a pinch

Wet Ingredients

  • Light Butter: 40g (1.4oz)
  • Brown Sugar Replacement: 60g (2.1oz)
  • Unsweetened Applesauce: 135g (4.8oz)
  • Egg Whites: 200ml (6.8 fl oz)
  • Vanilla Extract: 1 tbsp (15ml, 0.5 fl oz)

Add-ins

  • Sugar-Free Dark Chocolate Chips: 80g (2.8oz)

Method

  1. Preheat oven to 180°C (355°F).
  2. In a bowl, whisk together the light butter, granulated sweetener, and brown sugar replacement until smooth and creamy.
  3. Add applesauce, vanilla extract, and egg whites, then whisk again until fully combined.
  4. In a separate bowl, combine all dry ingredients.
  5. Slowly add wet ingredients into dry ingredients until the dough forms. (Note: You may need to add more flour depending on the type of protein powder used).
  6. Fold through chocolate chips.
  7. Use an ice cream scoop to form 12 cookie dough balls and place onto a lined baking tray. Slightly flatten the tops.
  8. Place into the fridge for 30–60 minutes to firm up. This is essential to create thicker cookies with a better texture (do not skip).
  9. (Optional but elite) Sprinkle a little flaky salt on top before or after baking.
  10. Bake for 9–11 minutes until the edges are lightly golden but the centers still look slightly underdone.
  11. LET COOL FULLY before eating because they continue setting outside the oven.

Notes

  • Protein Powder: Using a whey/casein blend is highly recommended to get the right dough consistency. If using pure whey, you might need to add more flour.
  • Cooling: Do not skip cooling. They continue to set after being removed from the oven and get their final texture then.
