Description
Healthy, low-ingredient protein cookies with clean macros. Easy to make, thick and soft texture, without a massive amount of peanut butter.
Ingredients
Dry Ingredients
- Plain Flour: 100g (3.5oz)
- PB2 Powder: 40g (1.4oz)
- Vanilla Protein Powder (Whey/Casein blend): 80g (2.8oz)
- Granulated Sweetener: 80g (2.8oz)
- Corn Starch: 10g (0.35oz)
- Baking Powder: 1/2 tsp
- Baking Soda (bi-carb): 1/4 tsp
- Instant Coffee: 1/2 tsp
- Salt: a pinch
Wet Ingredients
- Light Butter: 40g (1.4oz)
- Brown Sugar Replacement: 60g (2.1oz)
- Unsweetened Applesauce: 135g (4.8oz)
- Egg Whites: 200ml (6.8 fl oz)
- Vanilla Extract: 1 tbsp (15ml, 0.5 fl oz)
Add-ins
- Sugar-Free Dark Chocolate Chips: 80g (2.8oz)
Method
- Preheat oven to 180°C (355°F).
- In a bowl, whisk together the light butter, granulated sweetener, and brown sugar replacement until smooth and creamy.
- Add applesauce, vanilla extract, and egg whites, then whisk again until fully combined.
- In a separate bowl, combine all dry ingredients.
- Slowly add wet ingredients into dry ingredients until the dough forms. (Note: You may need to add more flour depending on the type of protein powder used).
- Fold through chocolate chips.
- Use an ice cream scoop to form 12 cookie dough balls and place onto a lined baking tray. Slightly flatten the tops.
- Place into the fridge for 30–60 minutes to firm up. This is essential to create thicker cookies with a better texture (do not skip).
- (Optional but elite) Sprinkle a little flaky salt on top before or after baking.
- Bake for 9–11 minutes until the edges are lightly golden but the centers still look slightly underdone.
- LET COOL FULLY before eating because they continue setting outside the oven.

Notes
- Protein Powder: Using a whey/casein blend is highly recommended to get the right dough consistency. If using pure whey, you might need to add more flour.
- Cooling: Do not skip cooling. They continue to set after being removed from the oven and get their final texture then.
