Description

A high-protein, extremely low-calorie coffee cake recipe designed to save your life during a calorie deficit. High in volume and high in caffeine!

Ingredients

  • 300ml (10 fl oz) Egg Whites
  • 15-20g (0.5-0.7oz) Instant Coffee
  • 1/4 cup (50g / 1.8oz) Granulated Sweetener (e.g., Monkfruit)
  • 1/4 cup (60ml / 2 fl oz) Hot Water
  • 20g (0.7oz) Vanilla Protein Powder

Method

  1. Preheat oven to 180°C (355°F). Add the egg whites to a bowl and beat with an electric mixer for around 5 minutes until stiff peaks form.
  2. In a separate bowl, mix together the instant coffee, sweetener, and hot water until dissolved and slightly thickened.
  3. Gently fold the coffee mixture into the whipped egg whites without knocking too much air out.
  4. Pour into a lined baking dish or loaf tin and bake for 12 minutes until lightly set on top. Let cool slightly before serving.
  5. Mix the vanilla protein powder with a dash of water until smooth and drizzle over the top before serving.
